- A whole duck (about 2 kg)
- 2 TBSP Rice Vinegar
- 4 TBSP Maltose or Honey
- 2 TBSP Shaoxing Wine
Pour boiling water over duck three times.
Hot water + Maltose + Vinegar + Wine and brush on to duck.
Oven
- 425F for 10 minutes
- 350F for 20 minutes
- Turn Over
- 350F for 20 minutes
- Remove Foil on Wing
- 350F for 20 minutes
